Ingredients

- 1 bell pepper, diced
- 1/2 cup diced vegetables (onion, zucchini, mushrooms, or carrot)
- 1 tbsp minced garlic
- 16 oz tofu (silken or firm)
- 1 tbsp nutritional yeast (optional)
- 1 tsp curry powder
- 1 tsp onion powder
- 1/2 tsp ground turmeric
- 1/2 tsp salt
- Pinch of black pepper (optional)
- Handful of spinach or kale (optional)
Instructions
- Prepare Ingredients: Grease a nonstick pan or add oil. Dice the bell pepper and other optional vegetables, and mince the garlic.
- Cook Vegetables: Sauté the diced vegetables and garlic over medium heat until lightly browned.
- Add Tofu: Drain the tofu. Break up firm tofu with a spatula while adding it; silken tofu will break up as you stir.
- Season and Cook: Add curry powder, onion powder, turmeric, salt, and black pepper. Stir and cook until the tofu is hot and excess liquid has evaporated.
- Add Greens: Stir in spinach or kale and cook until wilted.
- Serve: Serve the tofu scramble with toast, home fries, avocado, salsa, or hot sauce.
