  • 1 unbaked 23 cm pastry shell
  • 450 g fresh shrimp, peeled and deveined
  • 15 ml unsalted butter
  • 60 ml onion, finely chopped
  • 60 ml green bell pepper, finely chopped
  • 60 ml celery, finely chopped
  • 1 garlic clove, minced
  • 120 ml mayonnaise
  • 120 ml whole milk
  • 2 large eggs
  • 15 ml lemon juice
  • 5 ml Worcestershire sauce
  • 2.5 ml salt
  • 1.25 ml ground black pepper
  • 1.25 ml cayenne pepper
  • 100 g Cheddar cheese, shredded

Instructions

  1. Preheat your oven to 220°C. Place the unbaked pastry shell onto a baking sheet.
  2. Melt the butter in a large skillet over medium heat. Add the onion, green bell pepper, celery, and garlic. Sauté until the vegetables are soft and translucent.
  3. Add the shrimp to the skillet and cook until they turn pink and opaque. Remove from heat and drain any excess liquid.
  4. In a mixing bowl, whisk together the mayonnaise and milk until smooth. Add the eggs, lemon juice, Worcestershire sauce, salt, black pepper, and cayenne pepper. Mix well until all ingredients are combined.
  5. Distribute the sautéed shrimp and vegetables evenly over the pastry shell. Pour the custard mixture over the filling, and sprinkle shredded Cheddar cheese on top.
  6. Transfer the pie to the preheated oven and bake for 30 to 35 minutes, or until the filling is set and the surface is golden brown.
  7. Remove the pie from the oven and let it stand for 10 minutes before slicing and serving.

Notes

Make sure to drain the shrimp and vegetables well to avoid a soggy crust. Feel free to customize the vegetables; spinach or mushrooms can be great additions. Consider adding herbs like dill or parsley for extra flavor.
