  • 1 pound Italian ground sausage
  • 1 ½ cups buttermilk pancake mix
  • ½ yellow onion, finely chopped
  • 2 cups cheddar cheese, shredded
  • 1 teaspoon salt
  • 1 garlic clove, minced
  • 4 tablespoons lemon juice
  • 1 lemon, zest only
  • 3 tablespoons maple syrup
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • ¼ cup water

Instructions

  1. Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground sausage, pancake mix, onion, cheddar cheese, and salt. Mix by hand until evenly combined and sticky.
  3. Portion mixture into 1-ounce balls using a cookie scoop or spoon. Roll into smooth balls and place on prepared baking sheet.
  4. Bake for 25-30 minutes, until golden brown and cooked through.
