  • 1 egg yolk (room temp)

  • 6 tbsp unsalted butter
  • 1/3 cup dark brown sugar
  • 1/3 cup pure maple syrup
  • 2 cups pecans (chopped)
  • 1/3 cup heavy cream
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 1/8 tsp salt
  • Flaky sea salt (for garnish)

Instructions

  1. Mix the dry ingredients: In a bowl, whisk flour, cornstarch, baking soda, baking powder, and salt.
  2. Make the dough: Cream together the butter and sugars. Beat in the egg, yolk, and vanilla. Slowly add the dry ingredients.
  3. Shape cookies: Scoop the dough into balls, indent the centers with a spoon, and chill the dough for 30 minutes.
  4. Prepare the filling: Melt the butter, brown sugar, and maple syrup in a saucepan. Add the chopped pecans. Stir in the cream and spices. Let it cool slightly.
  5. Fill and bake: Spoon the filling into each chilled dough ball. Bake at 350°F for 10–12 minutes.
  6. Cool and finish: Let the cookies cool on the tray, then move them to a rack. Sprinkle with flaky sea salt and enjoy.

Notes

Store in an airtight container for up to one week or freeze for up to three months. Chilling the dough helps cookies hold their shape.
