  • 2 boneless, skinless chicken breasts, sliced

  • 1 tablespoon minced garlic
  • 100 grams asparagus, trimmed
  • Zest of 0.5 lemon, plus extra for garnish
  • Juice of 0.5 lemon
  • 45 mL soy sauce
  • Steamed rice

Instructions

  1. Sprinkle sliced chicken breasts with kosher salt and black pepper, ensuring even coverage.
  2. Heat olive oil in a large pan over medium-high heat. Add seasoned chicken and stir-fry for 4 minutes until chicken is no longer pink.
  3. Add minced garlic and continue to stir-fry for another 4 minutes until the chicken is fully cooked.
  4. Mix in asparagus, lemon zest, and lemon juice, cooking for about 2 minutes until asparagus is just tender.
  5. Pour in soy sauce, stirring to coat all ingredients evenly.
  6. Serve hot over steamed rice and garnish with additional lemon zest if desired.
