Layered Tortilla Kebab Skewers

Description

Fun and delicious kebab skewers layered with juicy meats, fresh veggies, and crispy tortillas. Perfect for gatherings and customizable with your favorite spices!


Ingredients

  • 12 flour tortillas, 20 cm diameter
  • 1 kg ground beef and pork mix
  • 2 small onions, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 bunch fresh parsley, chopped
  • 4 garlic cloves, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons sweet paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon black pepper
  • 1 teaspoon ground ginger
  • 2 teaspoons salt
  • Freshly ground black pepper, to taste
  • 110 g unsalted butter
  • Zest of 1 lemon
  • 2 garlic cloves, minced
  • Chili flakes, to taste
  • 1 small green chili, finely chopped
  • 3 tablespoons honey
  • 1/2 teaspoon salt

Instructions

  1. Finely chop the onions, red pepper, and parsley. Mince the garlic cloves.
  2. In a large bowl, combine the ground beef and pork mix. Add the chopped onions, red pepper, parsley, minced garlic, ground cumin, sweet paprika, ground coriander, black pepper, ground ginger, and salt. Mix until sticky and well combined.
  3. Trim the flour tortillas into large square pieces, removing the curved edges.
  4. Divide the meat mixture in half. Layer a tortilla square on a clean surface and spread a thin, even layer of the meat mixture on top. Continue alternating layers until you have six layers, finishing with meat on top. Repeat with the second portion and remaining tortillas.
  5. Press the layers down firmly and cut into five even rectangles.
  6. Thread each layered rectangle onto a skewer, keeping the layers intact.
  7. In a small saucepan over low heat, melt the unsalted butter. Add lemon zest, minced garlic, chili flakes, chopped green chili, and salt. Stir in honey until blended.
  8. Preheat grill to medium heat. Grill the skewers, basting with the sauce, for about 10 to 12 minutes until golden brown and fully cooked.
  9. Serve hot off the grill.

Notes

Press layers well to avoid falling apart. Marinating the meat mixture for extra flavor is recommended. Use other vegetables or spices as desired.
