Description

A delicious and easy dish combining savory meatballs, fluffy rice, and a unique honey garlic sauce, perfect for busy weeknights.


Ingredients

  • 1 pound ground beef or ground chicken
  • 1/4 cup breadcrumbs
  • 1 large egg
  • 2 tablespoons finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil (optional)
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1/3 cup honey
  • 1/4 cup low sodium soy sauce
  • 3 tablespoons ketchup
  • 2 tablespoons water
  • 2 cloves garlic, finely minced
  • 1 teaspoon cornstarch (optional)
  • 1 cup uncooked long grain or jasmine white rice
  • 2 cups chicken broth or vegetable broth
  • 1 tablespoon olive oil or unsalted butter
  • 1/2 cup diced bell peppers
  • 1/2 cup frozen peas
  • 1/4 cup finely chopped green onions (optional)

Instructions

  1. Preheat oven to 375°F and grease a 9 by 13 inch baking dish.
  2. In a large bowl, combine ground meat, breadcrumbs, egg, onion, garlic, soy sauce, sesame oil, ground black pepper, and salt.
  3. Shape the mixture into small meatballs, browning them in a skillet for 2 to 3 minutes on each side.
  4. In a saucepan, simmer honey, soy sauce, ketchup, water, and garlic. Thicken with cornstarch if desired.
  5. Spread uncooked rice in the baking dish, add bell peppers and peas, and drizzle with oil or butter.
  6. Pour broth over the rice and vegetables, stir, and nestle browned meatballs on top.
  7. Drizzle with honey garlic sauce, cover with foil, and bake for 40 minutes. Remove foil and bake for an additional 10 to 15 minutes.
  8. Let stand for 5 to 10 minutes before serving. Garnish with green onions if desired.

Notes

Brown the meatballs for enhanced flavor. Customize vegetables as desired. For spicier dish, add red pepper flakes.
