- 1 pound ground beef or ground chicken
- 1/4 cup breadcrumbs
- 1 large egg
- 2 tablespoons finely chopped onion
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil (optional)
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon salt
- 1/3 cup honey
- 1/4 cup low sodium soy sauce
- 3 tablespoons ketchup
- 2 tablespoons water
- 2 cloves garlic, finely minced
- 1 teaspoon cornstarch (optional)
- 1 cup uncooked long grain or jasmine white rice
- 2 cups chicken broth or vegetable broth
- 1 tablespoon olive oil or unsalted butter
- 1/2 cup diced bell peppers
- 1/2 cup frozen peas
- 1/4 cup finely chopped green onions (optional)
Instructions
- Preheat oven to 375°F and grease a 9 by 13 inch baking dish.
- In a large bowl, combine ground meat, breadcrumbs, egg, onion, garlic, soy sauce, sesame oil, ground black pepper, and salt.
- Shape the mixture into small meatballs, browning them in a skillet for 2 to 3 minutes on each side.
- In a saucepan, simmer honey, soy sauce, ketchup, water, and garlic. Thicken with cornstarch if desired.
- Spread uncooked rice in the baking dish, add bell peppers and peas, and drizzle with oil or butter.
- Pour broth over the rice and vegetables, stir, and nestle browned meatballs on top.
- Drizzle with honey garlic sauce, cover with foil, and bake for 40 minutes. Remove foil and bake for an additional 10 to 15 minutes.
- Let stand for 5 to 10 minutes before serving. Garnish with green onions if desired.
Notes
Brown the meatballs for enhanced flavor. Customize vegetables as desired. For spicier dish, add red pepper flakes.
