Description

Fresh, flavorful salsa that is easy to make and perfect for any occasion.

Ingredients

Scale
  • 3 ½ cups chopped tomatoes (or 28-ounce can diced tomatoes)
  • ¼ small onion
  • ⅓ cup fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 small jalapeno pepper (seeds removed)
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon sugar

Instructions

  1. Chop the tomatoes and place them over a strainer for 5 minutes. This helps to drain some of the liquid, so the salsa is not too wet. Discard the liquid.
  2. Add the tomatoes and the rest of the ingredients to a blender or food processor. Do short pulses until blended to your desired consistency.
  3. Transfer to a jar and store in the refrigerator for up to one week. Enjoy!

Notes

For a smoother salsa, blend longer or strain the mixture again after blending. Fresh lime juice makes a big difference; avoid bottled lime juice if possible.
