Homemade Moose Tracks Ice Cream

Description

A delightful combination of creamy vanilla ice cream with rich chocolate and crunchy peanut butter, perfect for hot summer days.


Ingredients

Scale
  • 2 cups (480ml) heavy cream
  • 1 cup (240ml) whole milk
  • 3/4 cup (150g) granulated sugar
  • 1 tablespoon vanilla extract
  • A pinch of salt
  • 4 large egg yolks
  • 1/2 cup (120g) peanut butter (creamy or crunchy)
  • 1/2 cup (120ml) chocolate fudge sauce
  • 1/2 cup (60g) mini peanut butter cups, chopped

Instructions

  1. In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, vanilla extract, and a pinch of salt. Heat over medium heat until the mixture is warm and the sugar is dissolved. Do not let it boil.
  2. In a separate bowl, whisk the egg yolks until they are pale and slightly thickened. Gradually pour about 1 cup of the warm cream mixture into the egg yolks, whisking constantly.
  3. Pour the egg yolk mixture back into the saucepan. Cook over medium heat, stirring constantly, until thick enough to coat the back of a spoon (about 5-7 minutes). Remove from heat and let it cool slightly.
  4. Transfer the mixture to a bowl, cover with plastic wrap, and refrigerate until completely chilled (at least 4 hours or overnight).
  5. Pour the chilled mixture into an ice cream maker and churn according to manufacturer’s instructions until soft-serve consistency is reached.
  6. In the last few minutes of churning, add the peanut butter, chocolate fudge sauce, and chopped mini peanut butter cups. Allow them to swirl into the ice cream.
  7. Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
  8. Scoop into bowls or cones and enjoy!

Notes

For best texture, chill the mixture overnight. Experiment with different mix-ins for variety.
