1 cup cottage cheese
2 large eggs
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 cup milk (any kind)
1/2 cup oat flour or all-purpose flour
1 teaspoon baking powder
1 cup fresh or frozen blueberries
Instructions
- Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch square or similar-sized round baking dish.
- In a large mixing bowl, whisk together cottage cheese, eggs, honey or maple syrup, vanilla extract, and cinnamon until well combined.
- Pour in the milk and stir to combine. Add flour and baking powder, mixing until smooth with no dry pockets.
- Gently fold blueberries into the batter. If using frozen berries, toss in a bit of flour first to prevent color bleeding.
- Transfer batter to the prepared baking dish and spread evenly.
- Bake for 30-35 minutes, until edges are golden and center is set.
- Let cool for 10 minutes before slicing. Serve warm or refrigerate for later.
