- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 3 tablespoons olive oil
- 2 tablespoons grated Parmesan cheese
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and freshly ground black pepper, to taste
- Wooden or metal skewers
Instructions
- In a medium-sized bowl, combine the olive oil, grated Parmesan cheese, minced garlic, dried oregano, dried basil, salt, and black pepper. Mix well until all ingredients are thoroughly incorporated.
- Add the chicken cubes to the marinade, ensuring each piece is evenly coated. Cover the bowl and refrigerate for at least 30 minutes.
- Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stovetop.
- Thread the marinated chicken cubes onto the skewers, leaving a small gap between each piece.
- Place the assembled skewers on the preheated grill. Cook for approximately 5-7 minutes per side, or until the chicken reaches an internal temperature of 165°F and is no longer pink in the center.
- Remove the skewers from the grill and let them rest for a few minutes. Serve warm, garnished with additional grated Parmesan cheese and fresh herbs if desired.
Notes
You can store leftover cooked chicken skewers in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven at 350°F for about 10 minutes or on the grill for a few minutes per side.
