- 2 large eggs, beaten
- 2 tablespoons olive oil or melted butter
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (preferably Panko)
- 2 teaspoons garlic powder
- 1 teaspoon Italian seasoning (optional)
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) if baking.
- Pound chicken to even thickness if needed.
- In a bowl, mix Parmesan, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
- Beat eggs in a separate bowl.
- Dip each chicken breast in eggs, then coat thoroughly with the Parmesan mixture.
- For baking: Place chicken on a greased baking sheet, drizzle with olive oil or butter, and bake 20-25 minutes until golden and cooked through (165°F internal temperature).
- For pan-frying: Heat olive oil or butter in a skillet over medium heat.
- Cook chicken 4-5 minutes per side until golden and cooked through (165°F internal temperature).
- Let chicken rest for 5 minutes before serving.
