Ingredients

  • 2 large eggs, beaten
  • 2 tablespoons olive oil or melted butter
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (preferably Panko)
  • 2 teaspoons garlic powder
  • 1 teaspoon Italian seasoning (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) if baking.
  2. Pound chicken to even thickness if needed.
  3. In a bowl, mix Parmesan, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
  4. Beat eggs in a separate bowl.
  5. Dip each chicken breast in eggs, then coat thoroughly with the Parmesan mixture.
  6. For baking: Place chicken on a greased baking sheet, drizzle with olive oil or butter, and bake 20-25 minutes until golden and cooked through (165°F internal temperature).
  7. For pan-frying: Heat olive oil or butter in a skillet over medium heat.
  8. Cook chicken 4-5 minutes per side until golden and cooked through (165°F internal temperature).
