- 1 pound Jumbo Shrimp (16/25, peeled and deveined with tail on)
- 3 Large Eggs
- 1/4 cup All-Purpose Flour
- 1½ teaspoons Baking Powder
- ¼ teaspoon Cayenne
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 cup Sweetened Flaked Coconut
- 1 cup Panko
- ½ cup Orange Marmalade
- 2 tablespoons Sweet Chili Sauce
- 2 teaspoons Dijon Mustard
- 1 teaspoon Horseradish
- Dash of Salt
Instructions
- Prep the shrimp by ensuring they are peeled, deveined, and ready to use.
- In a bowl, mix together flour, baking powder, cayenne, garlic powder, onion powder, and a dash of salt.
- In another bowl, beat the eggs until well mixed.
- In a third bowl, combine the sweetened flaked coconut and panko.
- Dip each shrimp into the flour mixture, then the eggs, and finally into the coconut-panko mix, ensuring they are well coated.
- Preheat the air fryer to 400°F (200°C) for about 5 minutes.
- Lightly spray the air fryer basket with cooking spray and place the shrimp in a single layer.
- Cook for about 8–10 minutes until golden brown and crispy, flipping halfway through.
- For the dipping sauce, mix orange marmalade, sweet chili sauce, Dijon mustard, and horseradish in a small bowl.
Notes
Serve hot with a sweet and tangy dipping sauce. Garnish with cilantro or lime wedges for an added zing.
