Description

These Coconut Flour Soft Cookies are chewy with golden edges and a gentle hint of coconut, perfect for satisfying cookie cravings without the guilt!


Ingredients

  • 4 large eggs
  • 1/2 cup maple syrup or honey
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups coconut flour
  • 1/2 teaspoon baking soda
  • Optional: mini chocolate chips, chopped nuts, dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk the eggs until frothy.
  3. Add the sweetener, melted coconut oil, and vanilla extract to the eggs.
  4. Stir in the coconut flour and baking soda until well combined; the dough will be soft.
  5. Scoop little balls of dough onto a baking tray, spacing them out as they will spread.
  6. Bake for 10-12 minutes until the edges are set but the tops still look soft.
  7. Allow to cool before serving.

Notes

For a different flavor, try adding cocoa powder, orange zest, or adjusting the sweetness with your preferred sweetener. Don’t overbake to avoid dry cookies.
