Ingredients

- 8 organic lemons, peeled
- 750 milliliters Everclear liquor
- 6 cups water
- 3 cups granulated sugar
Instructions
- Using a potato peeler, carefully peel the lemons to get just the yellow outer peel.
- Place the lemon peels in a large glass jar and pour in the Everclear, ensuring all peels are submerged.
- Seal the container and store in a cool, dark place for 2-4 weeks, shaking daily.
- After infusion, combine water and sugar in a large pot over medium heat until the sugar dissolves, then let it cool.
- Strain the lemon-infused alcohol through a fine mesh strainer into a large bowl, then add the cooled sugar syrup and stir well.
- Transfer the limoncello to bottles for storage in the refrigerator.
Notes
Store limoncello in the refrigerator for up to several months. For best flavor, use organic lemons and shake daily during infusion.
