- 2 large chicken breasts
- 2 large eggs
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 tablespoon Italian seasoning
- 2 tablespoons olive oil
- 3 cups marinara sauce
- 1 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 425°F. Cut each chicken breast in half lengthwise to make 4 thinner pieces.
- In a shallow dish, whisk together the eggs, flour, salt, and black pepper.
- In a separate dish, combine the breadcrumbs, parmesan, and Italian seasoning.
- Dredge the chicken in the egg wash and shake off excess. Transfer to the breadcrumb mixture and coat thoroughly, ensuring no bald spots.
- Heat a large pan over medium heat and add the olive oil. Cook the chicken for 3-4 minutes per side until golden brown and cooked through.
- Spread half of the marinara sauce in a 9×13 baking dish. Lay the chicken in a single layer over the sauce, then spoon the remaining marinara over the top. Sprinkle with mozzarella cheese.
- Bake uncovered for 15 minutes or until the cheese melts and the sauce is bubbling. Enjoy!
Notes
For extra flavor, marinate the chicken in Italian dressing for a couple of hours before dredging. Use fresh mozzarella for a creamier texture.
