Description

Ingredients

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • 1 teaspoon Worcestershire sauce
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup frozen peas and carrots
  • ½ cup sour cream
  • 2 cups shredded sharp cheddar cheese
  • ½ cup crushed Ritz crackers
  • 1 tablespoon melted butter

Instructions

  1. Step 1: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with nonstick spray.
  2. Step 2: In a large skillet over medium-high heat, cook the ground beef until browned, about 5-7 minutes. Add the diced onion and minced garlic, cooking for an additional 2 minutes until softened. Season with salt, black pepper, smoked paprika, dried oregano, and Worcestershire sauce, stirring to combine. Drain any excess grease if necessary.
  3. Step 3: Stir in the uncooked rice, beef broth, cream of mushroom soup, drained diced tomatoes, frozen peas and carrots, and sour cream. Mix thoroughly until all ingredients are evenly combined.
  4. Step 4: Transfer the mixture to the prepared baking dish, spreading it out evenly. Cover with foil and bake for 35 minutes.
  5. Step 5: In a separate bowl, combine the shredded sharp cheddar cheese, crushed Ritz crackers, and melted butter. After 35 minutes, remove the casserole from the oven, discard the foil, and sprinkle the cheddar crust mixture evenly over the top.
  6. Step 6: Return the casserole to the oven and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  7. Step 7: Allow the casserole to cool for 5 minutes before serving.

Notes

You can store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat in the microwave or oven.
