Delightful blueberry waffles that are warm, fluffy, and bursting with fresh blueberries, perfect for breakfast, brunch, or dessert.
Ingredients

- 2 cups all-purpose flour
- 3 tablespoons sugar
- 1/2 teaspoon salt
- 4 teaspoons baking powder
- 1 ½ cups milk
- 2 large eggs
- 1/3 cup oil (or melted butter)
- 1 teaspoon vanilla extract
- 1 cup blueberries (fresh or frozen)
Instructions
- Preheat your waffle iron.
- In a large bowl, add the flour, sugar, baking powder, and salt. Whisk together until combined.
- In a medium bowl, add the milk, eggs, oil, and vanilla. Whisk these wet ingredients together.
- Pour the wet ingredients into the dry ingredients. Mix until JUST combined. Don’t overmix; lumps are okay!
- Gently fold in the blueberries to the batter.
- Spray the waffle iron generously with oil. Scoop the batter into the center of the iron, being careful not to overfill. Cook until golden brown and crisp. Transfer to a wire rack to cool. Repeat with the remaining batter.
Notes
Serve with maple syrup, honey, whipped cream, or fresh fruit. Store leftovers in an airtight container in the refrigerator for up to three days or freeze for up to two months.
