Deliciously sweet biscuits infused with fresh blueberries and buttery goodness, perfect for breakfast or snacks.


Ingredients

  • 315 grams all-purpose flour, spooned and leveled
  • 67 grams granulated sugar
  • 1 tablespoon baking powder
  • 0.25 teaspoon salt
  • 415 to 475 milliliters buttermilk
  • 225 grams fresh blueberries
  • 115 grams salted butter, melted
  • 120 grams powdered sugar
  • 30 milliliters fresh lemon juice
  • 0.5 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 230°C (450°F).
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Gradually add buttermilk to the dry mixture, stirring until a sticky dough forms. Add more buttermilk if needed.
  4. Fold in fresh blueberries carefully.
  5. Pour melted butter into the bottom of a 23 x 23 cm baking dish and spread it evenly.
  6. Spread the biscuit dough over the melted butter and score it into nine portions.
  7. Bake in the preheated oven for 25 to 30 minutes until golden brown.
  8. Whisk powdered sugar, lemon juice, and vanilla extract in a bowl until smooth, adjusting thickness as desired.
  9. Allow biscuits to cool slightly, then drizzle with the lemon glaze and serve warm.

Notes

Best served warm. Store in an airtight container at room temperature for up to two days or refrigerated for up to a week. Freeze for longer storage.
