Description
A delightful dish combining savory chicken with sweet strawberries and fragrant basil, perfect for summer meals.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 1 garlic clove, minced
- Salt, to taste
- Freshly ground black pepper, to taste
- 225 grams fresh strawberries, diced
- 2 tablespoons red onion, finely chopped
- 2 tablespoons fresh basil, chopped
- 1 teaspoon balsamic vinegar
- 0.5 teaspoon honey (optional)
- Pinch of salt
Instructions
- In a medium bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and freshly ground pepper until thoroughly combined.
- Place chicken breasts in a shallow dish and pour the marinade over them. Ensure each breast is evenly coated. Cover and refrigerate for at least 20 minutes, up to 2 hours.
- Gently combine diced strawberries, finely chopped red onion, chopped basil, balsamic vinegar, honey (if using), and a pinch of salt in a small bowl. Stir lightly and refrigerate until ready to use.
- Heat a grill or skillet over medium-high heat. Remove chicken breasts from the marinade and cook for 5 to 7 minutes per side, ensuring a deep sear and that the interior is fully cooked.
- Transfer the cooked chicken to a plate and rest for 5 minutes. Slice the chicken across the grain into portions.
- Plate the sliced chicken and top each piece generously with the strawberry basil relish. Serve immediately.
Notes
This dish is best served warm, right after cooking. Pairs well with rice, quinoa, or a fresh salad. Adjust the amount of honey based on preferred sweetness.
