A tasty and healthier alternative to traditional fries, Air Fryer Zucchini Fries are crispy, easy to make, and perfect as a snack or side dish.

- 2 Medium-Sized Zucchini
- 1/2 cup All-Purpose Flour
- 1 teaspoon Salt
- 1 teaspoon Cajun Seasoning
- 2 Large Eggs
- 1 cup Panko Breadcrumbs
- 1 1/2 tablespoons Olive Oil
- 1/3 cup Grated Parmesan
Instructions
- Wash and cut each zucchini into 4-inch sticks.
- In a shallow bowl, combine the flour, salt, and Cajun seasoning.
- In a separate bowl, whisk the eggs.
- In a third shallow bowl, combine the panko breadcrumbs and olive oil. Microwave at 30-second intervals and stir until lightly browned. Once cooled, add the Parmesan cheese.
- Dip each zucchini stick first into the flour mixture, then into the eggs, and finally into the panko breadcrumbs.
- Lightly spray an air fryer basket with nonstick cooking spray. Add a single layer of zucchini fries to the basket and lightly spray them with cooking oil.
- Cook at 400℉ for 8-9 minutes, flipping halfway. Season with salt to taste.
Notes
Cut zucchini into uniform sticks for even cooking. Experiment with different seasonings for your favorite flavor. Cook in batches if necessary to avoid overcrowding.
