  • 2 Boneless Skinless Chicken Breasts
  • 1 cup Panko Breadcrumbs
  • 2 tablespoons Olive Oil
  • 1 Large Egg
  • 1 tablespoon All-Purpose Flour
  • 2 tablespoons Hot Sauce (e.g., Frank’s Red Hot Sauce)
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Cayenne Pepper
  • ½ teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 tablespoon Hot Sauce
  • ¼ cup Mayonnaise

Instructions

  1. In a shallow bowl, mix the panko breadcrumbs and olive oil until well coated. Microwave for 1-2 minutes until slightly brown, then set aside to cool.
  2. In another bowl, whisk together egg, flour, hot sauce, garlic powder, salt, and pepper.
  3. Tenderize chicken breasts with a meat mallet, then cut each breast in half.
  4. Dip chicken pieces into the egg mixture, then coat with panko breadcrumbs.
  5. Spray air fryer basket with nonstick cooking spray. Place chicken in a single layer and cook at 400°F for 12-16 minutes, flipping halfway.
  6. Mix mayonnaise with hot sauce to create spicy mayo.
  7. Spread spicy mayo on top buns, add cooked chicken, and serve with desired toppings.

Notes

Tenderize the chicken well for juiciness and let panko cool before use to avoid overcooking.
