Instructions
- In a shallow bowl, mix the panko breadcrumbs and olive oil until well coated. Microwave for 1-2 minutes until slightly brown, then set aside to cool.
- In another bowl, whisk together egg, flour, hot sauce, garlic powder, salt, and pepper.
- Tenderize chicken breasts with a meat mallet, then cut each breast in half.
- Dip chicken pieces into the egg mixture, then coat with panko breadcrumbs.
- Spray air fryer basket with nonstick cooking spray. Place chicken in a single layer and cook at 400°F for 12-16 minutes, flipping halfway.
- Mix mayonnaise with hot sauce to create spicy mayo.
- Spread spicy mayo on top buns, add cooked chicken, and serve with desired toppings.
